Everything about Shun Premier knives, from the beautiful hamon to the layered Damascus steel and the Shun logo embossed in the endcap, calls to mind the handcrafted knifemaking techniques of ancient Japan. Handcrafted by expert artisans in Seki City, Japan, Shun Premier knives feature a core of proprietary VG-MAX super steel clad on both sides with 34 layers of Damascus stainless steel. Their ultra-thin blades are cut to a 16° angle, and their edges retain a lasting razor-sharpness for precision and control. The striking, hand-hammered finish (tsuchime in Japanese) reduces drag when cutting and keeps food from sticking to the blades.
