Summer Pasta Salad
Ingredients – Serves 2-3
Boiled Pasta – 2 Cups
Quartered Grape Tomatoes – 1 Cup
Sliced Red Onions – 1 Cup
Chopped Green & Red Peppers – 1 1/2 Cup
Quartered Cucumber – 3/4 Cup
Broccoli Florets – 3/4 Cup
Sliced Green Olives – 1/2 Cup
Basil – Few Springs cut into ribbons
Crumbled Goat Cheese – 2-3 Tbsps
Annies Organic Balsamic Dressing – 3 Tbsps
Boil the pasta in a saucepan for 8-9 minutes.Make sure you add a pinch of salt & a tsp oil to the boiling water before you add the pasta to the water.
Place the peppers,cucumber,tomatoes & onions in a mixing bowl.
Next up add ribboned basil & boiled pasta.
Mix everything together and add cheese & dressing then serve immediately.
