It goes through a journey much like outer space. Our freeze dried ice cream begins with delicious premium Grade 'A' frozen ice cream which is frozen solid to 40F below zero. It is then placed in a large 'space' vacuum chamber. An vacuum is drawn from the chamber (just like in outer space) and a small amount of heat is applied (between 100-130). As this is done the frozen moisture from the ice cream is magically vaporized and goes from the frozen state to the dry state without going through the melted liquid state. Thus, freeze - dried.
