Japanese Cucumber Salad
Ingredients – Serves 2-3
Cucumber- 1
Salt – 1 Tsp
Sugar – 1 Tsp
Lightly Toasted Sesame Seeds – 2 tsps
Rice Wine Vinegar- 2.5 tbsps
Utensils
Colander
Paper Towel – 2 Sheets
Serving Bowl
Procedure
Toast sesame seeds in a nonstick pan for 1-2 minutes & let it cool on the side.
Peel & thinly slice the cucumber. I used a mandolin as its faster and easier.
Double layer a colander over a bowl and place the peeled & slices cucumber over the towel for 20 mins.
After 20 mins, place the cucumber in the bowl, add all the ingredients to it. Mix well and serve immediately.

Note: In the past i have dissolved the salt & sugar in the vinegar & added the cucumber to it but it tends to make the salad watery however feel free to do what works for you.
